1 pound ground turkey
1 carrot - shredded
1 small yellow onion - diced
1 red bell pepper - diced
2 garlic cloves - minced
1/4 cup ketchup
1 tablespoon dijon mustard
1 egg
1 tablespoon worcestershire sauce
1 cup Italian style breadcrumbs
1 tablespoon Herbs de provence
1 tablespoon olive oil
1 tablespoon Kosher Salt
Black pepper to taste
Preheat oven to 350 degrees.Heat the olive oil in a saute pan over medium heat. When hot, add the red pepper, carrot, onion, and garlic. Saute until soft, about 10 minutes. Remove from heat and let cool a bit. In a mixing bowl, mix the ketchup, mustard, egg, worcestershire sauce, salt and pepper together. Add the vegetable mixture, ground turkey, and Herbs de provence. Mix together, then add the breadcrumbs. Form into a loaf and place on a sheet pan. Cook, uncovered, for 45-50 minutes. ENJOY!!
